Coconut Cream Pie
Bake a single pie crust until brown and crisp.
1/4 Cup Corn Starch
1/2 Cup Sugar
2 Eggs Separated
2 Cups Milk
1 Tbsp. Vanilla
1 Cup Coconut
Mix corn starch and sugar in pan. Seperate eggs and place
yolks in sugar and corn starch stirring until eggs are well
mixed with dry ingredients. Gradually add milk mixing
thoroughly after each addition. Place over medium heat and
cook until thick. Remove from heat and add vanilla and
coconut. Spoon into shell.
Beat two egg whites until white and fluffy gradually add 1/4
cup sugar and beat until stiff. Spread across pie filling
being sure to tag crust edges with meringue. Brown in oven
till peaks are lightly brown and merigue is set.
Fresh Blueberry Pie
1 Pint Fresh Blueberries
1 Cup Water Add More If Needed
1 Fresh Lemon
1 Cup Sugar
3 Tablespoons Corn Starch
1/3 Cup Water
Crust For 8" Two Crust Pie
Place blue berries, 1 cup water, 1/3 cup fresh lemon juice,
and sugar in glass or enamel pan and cook just until the
berries swell and start to pop. Mix corn starch and water
together and add to the mix to thicken. Pour into bottom
crust and top with second crust. Bake at 350 till crust is
nicely browned. Great served with fresh cream, whipped
cream, or ice cream. Hot or cold.
Fresh Strawberry Pie
Fresh Strawberry Pie is what Spring is about.
Baked 9" Pie Shell
1 Quart Fresh Strawberries
1 Cup Sugar
Wash and stem berries. Use any berries with bad parts or
that are not well formed to make glaze.
Berries may be sliced or left whole to make pie. Combine
with 1 cup of sugar and let set while getting other
1/2 Cup Sugar
1/2 Cup Water
Combine berries, sugar, and water and boil until sugar is
dissolved. Mix 2 tablespoons of cornstarch with 1/2 cup
water and add to mixture. Stir until glaze has thickened.
Arrange uncooked strawberries in pie shell and pour glaze
over them. Chill in refrigerator till serving time. Serve
with whipped cream or ice cream.
Lemon Chess Pie
Mix together in a bowl
2 Cups Sugar
1 Tablespoon Flour
1 Tablespoon Cornmeal
Pinch of Salt
4 Eggs one at a time
1/2 Cup Melted Margarine or Butter
1/4 Cup Lemon Juice
Pour into 9" unbaked pie shell.
Bake at 350 til it begins to set. Remove to cool
Pecan pie is so southern it's usually called southern pecan
1 Unbaked 9" Pie Shell
1/2 Stick Butter
1/2 Cup Brown Sugar
1/2 Cup White Sugar
1 Tsp. Salt
1 Tsp. Vanilla
1/3 Cup White Corn Syrup
1 Cup Pecans
Melt butter. Add sugars and salt and desolve in melted
butter. Beat in eggs. Add syrup and vanilla. Stir in
pecans and pour into pie shell top with additional pecan
halves to make pie look good. Bake in 350 degree oven till
crust is brown and knife can be inseted cleanly in filling.
