Easy Sugar Cookies

Sugar Cookies can be sliced or rolled and cut with cookie
cutters.  Kids love to make them.

1-1/2 Cups Sugar
1 Cup Shortening
2 Eggs
1 Tsp. Vanilla
4 Cups Self-Rising Flour

Cream sugar and shortening together and beat in eggs.  Add
vanilla.  Blend in flour a cup at a time until dough is
stiff.  Divide in half, roll into logs and wrap in waxed
paper. Store in refrigerator or may be frozen.  To bake
remove roll and slice off in 1/4 inch slices.  Sprinkle with
sugar and bake in 350 degree oven.

Ginger Bread Cookies

1 Cup Shortening
3/4 Cup Brown Sugar
1/2 Cup Sugar
1/4 Cup Dark Corn Syrup or Molasses
2 Eggs
4 Cups Flour
1 Tsp. Soda
1 Tsp. Salt
1 Tsp Ginger
2 Tsp Cinnamon
1 Tsp Cloves

Blend shortening, sugar, and brown sugar. Add syrup and mix
well.  Blend in eggs. Stir together all dry ingredients and
gradually blend into sugar mixture.  Work with hands if
mixture gets to stiff to stir.  Roll out on floured surface
and cut gingerbread men, and other shapes out of dough.
Cookies can also be cut into rounds and sprinkled with
cinnamon sugar for traditional ginger cookies.

Peanut Butter Cup Cookies

These are really nice for gift giving.  The peanut butter
cup flower pots make them extra special.

3/4 Cup Peanut Butter
1/4 Cup Butter
3/4 Cup Brown Sugar
3/4 Cup White Sugar
2 Eggs
1 Tsp. Vanilla
2-1/2 Cups Flour
1 Tsp. Salt
1 Tsp. Soda
1 Package Bite Size Peanut Butter Cups

Cream sugars, peanut butter, and butter until well blended.
Add vanilla and eggs.  Blend dry ingredients and stir into
sugar mixture.  Roll into 1 inch balls and roll balls in
sugar bake in 375 degree oven until brown.  Remove from oven
and cool slightly.  Slice peanut butter cup in half and
press 1/2 cup into each cookie.

Cookies can be decorated with flowers to resemble a flower
pot with flower growing out of peanut butter cup.

Pecan Cresants

1 Stick Butter
1/2 Cup White Sugar
1/2 Cup Brown Sugar
1 Egg
1 Tsp. Vanilla
1-1/3 Cups Flour
1 Tsp Salt
1/2 Tsp Soda
1/2 Cup Chopped Pecans
1 Cup Chocolate Chips
1 Tbsp. Butter

Cream butter, brown sugar, and white sugar.  Blend in
vanilla and eggs.  Stir dry ingredients together and blend
into sugar mixture.  Add pecans and mix.  Roll dough into
short tubes and shape into cresent shapes.  Bake in 350
degree oven. Cool and place on wax paper. Melt chocolate
chips in tablespoon of butter.  Drizzle over crescents by
dropping from fork.
