Fish


Baked Fish with Tomato and Onion

1 Pound Whiting or Other White Fish
2 Whole Tomatoes
1 Onion
1 Bell Pepper
Oil
Lightly oil glass or enamel baking dish.
Salt and pepper fish
Place in bottom of dish

Top each fish with slices of tomato and rings of onion and bell pepper. Bake until fish flakes easily.


Cornmeal Fried Catfish

Saturday's catch makes a great dinner.

1 Lb. Catfish Fillets
2 Cups Self-Rising Cornmeal Mix
1 Egg and 1/4 Cup Water

Beat egg and water together until they are thoroughly mixed.
Roll fish in egg and then in cornmeal.  Fry in deep fat
until crisp and golden brown.


Grilled Trout

Clean and salt and pepper each trout.
Place a pat of butter in the body cavity
Double wrap in foil.
Grill over hot coals.

Serve with lemon wedges, boiled new potatoes and fresh green peas.


Lemon Fish Nuggets

1 Lb Catfish, Perch, etc.  
1 Lemon
1/4 Cup Butter

Wash and cut fish into bite size pieces. Melt butter in
skillet.  Toss in fish and begin to brown in butter over
medium heat.  Salt and pepper to taste.  As fish cook begin
squeezing lemon juice over them until all the juice is
squeezed out of the lemon.  Fish cooks rapidly and should be
done in 15 to 20 minutes. Serve with rice, potatoes, or
noodles.


Mackeral or Salmon Patties

1 Can Mackeral or Salmon or 2 Cans Tuna
3 Tbsps Finely Chopped Onion
2 Eggs
12 Saltines Finely Crushed
Garlic Salt

Drain off water. Remove large bones from center of salmon or
mackeral. Take off skin and discard. Flake meat into bowl.
Tuna needs no special preparation but drain off oil or
water.  Combine meat with eggs and cracker crumbs. Stir in
onion and garlic salt.  Heat oil in skillet and drop fish
mixture into skillet by tablespoons full. Flatten. Cook on
one side then flip and cook on other side. Patties should be
nicely brown. 


Tuna & Taters

1 Can Tuna
4 Small Potatoes
1 Red or White Onion
Salt/Pepper

Boil potatoes, remove skins, Dice onion. Mix all together. It's ok if
the potatoes get mashed besure to break up tuna.  This is good with
crackers, fried cornbread. You can add tomatoes or chopped jalapeno
peppers, eat as is or add your choice of dressings. enjoy

By the way if you have any leftover's it can be turned into a quick
soup by adding a can beans, your choice, and 1qt v8 juice. Whatever you want.
