Cakes


Easy Cake

This cake is a snap to make.

1/2 Cup Shortening
2-1/2 Cups Flour
3 Tsp Baking Powder
1 Tsp Salt
1-1/2 Cups Sugar
1 Cup Milk
1 Tsp Vanilla
2 Eggs

Put shortening into bowl and let soften. Place on stove top
while oven is heating if needed.

Stir together flour, baking powder, salt, and sugar.  When
shortening is soft stir the flour mixture into shortening
add 3/4 cup of milk and vanilla.  Mix on medium speed with
mixer for a couple of minutes. Add eggs and remaining milk
and mix till smooth and well blended.  Pour batter into pans
and bake in 350 degree oven until pick comes out clean.
Cool.

Frosting 

1/3 Cup Sugar
1/4 Cup Light Corn Syrup
2 Squares Chocolate
3 Tbsps Butter
1 Egg
1 Tsp Vanilla
1-1/3 Cups Coconut
1 Cup Chopped Nuts.

Combine sugar and corn syrup in sauce pan.  Bring to a boil
and cook for about 1 minute.  Remove from heat.  Add
chocolate and butter and stir well.  Beat egg and gradually
add a little of the chocolate mixture to beaten egg. Return
the egg portion back to pan and cook another minute stiring
constantly.

Remove from heat, add vanilla, coconut, and nuts.  Frost
cake.

Note:  This frosting is good on any cake (No chocolate,
leave it out and it makes a great frosting without it.)


Red Velvet Cake

This is one of the most traditional southern cakes.

1/2 Cup Butter
1-1/2 Cups Sugar
2 Eggs
1 Tsp. Vanilla
2 Tbsp. Cocoa
1 2 oz bottle of Red Food Coloring
2-/14 Cup Flour
1 Tsp. Salt
1 Cup Buttermilk
1 Tbsp Vinegar
1 Tsp Soda

Cream butter and sugar.  Blend in eggs, vanilla, cocoa, and
red food coloring. Mix together dry ingredients and add to
butter mixture.  Add buttermilk and blend in.  Mix together
soda and vinegar and stir into cake mix.  Blend well. Batter
is very thick.  Bake in two greased and floured nine inch
cake pans at 350 degrees.  Turn out and cool completely.

Frosting.

This frosting isn't the usual confectioner's sugar blend but it is really good. 3 Tbsp Flour 1 Cup Milk 2 Sticks Butter 1 Cup Sugar 1 Tsp. Vanilla Boil Flour and milk until thin then let cool. Cream butter, sugar, and vanilla. Beat this mixture into flour and milk sauce one spoon at a time until light and fluffy. Frost cake.


Sheet Cake

2 Cups Flour
2 Cups Sugar
1 Tsp Salt
1 Tsp Baking Soda
2 Sticks Margarine

1 Cup Water
3 Tbsps Cocoa
2 Eggs
3 Tsps Vanilla
1/2 Cup Buttermilk

Sift the first four ingredients together. Melt butter in
sauce pan and add cocoa to make paste.  Gradually stir in 1
cup of water and bring the mixture to a boil. Cool for five
minutes and add to flour mixture along with buttermilk. When
all is well blended pour into a greased and floured
sheetcake pan and bake in a 350 degree oven for about 20
minutes test for doneness.

Frosting for Sheet Cake

1 Stick Butter
5 Tbsps Milk
3 Heaping Tbsps Cocoa
1 Box Confectioners Sugar
1 Cup Chopped Nuts 
2 Tsps Vanilla

Melt butter and add cocoa untill paste is formed.  Gradually
add milk until well blended.  Bring mixture to boil and cook
one minute.  Cool for about five minutes and then add
powdered sugar, nuts and, vanilla. Frost cake while it is
still warm.
