Breaded Turkey Patties
Similar to Chicken Fried Steak but easier and cheaper.
1 Pound Ground Turkey
8 Saltine Squares
Crush saltines into crumbs using blender or rolling pen.
Blend turkey with egg and saltines. Put flour in flat pan
and mix with chicken seasoning. Pat turkey into cutlets and
dredge in seasoned flour. Fry in small amount of oil until
both sides are nicely brown.
Gravy may be made from drippings just like fried chicken.
Another one of those traditionally southern dishes.
1 Fryer Cut Up or 8 Pieces of Chicken
1/2 Cup Milk
Flour, Salt, and Pepper Mixture
Wash chicken and remove excess fat. Skin if you wish. Beat
Eggs and milk together in a bowl large enough to dip chicken
pieces into. In small dish or pan stir flour, and salt and
pepper to taste until well mixed. Dip chicken into egg
mixture and coat well then dredge in flour. Fry in hot oil
until well done. 35-45 minutes depending on size of pieces.
Pour off excess grease leaving 3 to 4 tablespoons and make
pan gravy from chicken drippings.
For extra crispy fried chicken let chicken set for about ten
minutes after first dipping them repeat process.
Country Chicken Gravy
To pan drippings add 1/4 cup flour and stir over medium heat
until flour is lightly browned. Pour in 2-1/2 cups milk and
stir until gravy is thickened. Season with salt and peper as
Stuffed Chicken Breast
A little fancy yet easy to fix.
1 Chicken Breast Per Person
Remove skin and wash chicken breast. Pat dry and in low
side of curve make slit in flesh leaving 1/2 inch attached
at each side.
Fill with one of the following mixtures.
Prepared package stuffing Precooked yellow rice mix Apples,
Celery, and Raisins Or experiment with any combination of
foods you like.
Place just enough of the mixture to expand the breast but
not to pull ends loose. Salt and Pepper to taste and bake
in 350 degree oven until chicken is done.
