Fried Okra
Fried Okra is something they really don't cook up north.
Okra
2 Eggs Beaten with 1/4 Cup Milk
Self-Rising Cornmeal Mix
Wash and stem okra. Slice into 1/2 inch chunks or longs
ways like french fries both ways are good. Dip into egg
mixture and roll in self-rising cornmeal mix. Fry in hot
grease to cover. Do not layer or the okra will stick
together.
Onion Rings
Onion Rings
1 Large Spanish or Sweet Yellow Onion.
2 Eggs
1/2 Cup Milk
3/4 Cup Flour
1/4 Cup Corn Starch
Beat milk and eggs together. Stir flour and cornstarch in
dredging pan. Clean and slice onion into 1/4 inch thick
slices and pop layers apart forming rings. Soak onion rings
in milk and egg and then dredge in flour. Fry in deep fryer
or pan with at least enough oil to cover rings. Fry just a
few at a time for best result.
Sweet Potato Casserole
This is nothing like sweet potatoes or casserole.
4 Large Sweet Potatoes
1/2 Stick Butter
1/2 Cup Brown Sugar
1/2 Cup Milk
Peel and dice potatoes. Boil in water until potatoes are
done. Drain off water and add butter and brown sugar. Rice
potatoes through potato ricer or use a potato masher and
mash them. When potatoes are nicely pureed whip in the milk
with ricer or masher. Pour into a caserole and top with the
following.
Mix
1/2 Cup Brown Sugar
1/2 Cup Ground Pecans
1/4 Cup Honey
1/2 Stick Butter.
Sprinkle over sweet potatoes and bake in 350 degree oven for
15-20 minutes.
Yellow Squash
Squash (Hillbilly Style)
Yellow Summer Squash
Crooked Neck Squash
Flour Mixed with Salt and Pepper
Wash and slice off a piece at both ends of the squash. Do
not peel. Slice into 1/4 inch thick pieces and run water
over slices in colander. Shake off excess water and roll in
seasoned flour. Fry quickly a few at a time in hot oil.
