Beans and Peas

Traditional New Years Day Meal.
Great anytime.
1 Pound Blackeyed Peas
1 Pound Smoked Ham or Hocks
Rice
Salsa
Pick over and wash peas. Cover with water and bring to a
boil. Turn down and let cook at a low boil for 30 minutes.
Add ham and cook untill peas are done. Cook down until juice
is nice and thick.
Cook rice according to package directions.
Make salsa from tomatoes and peppers by cooking them down
until they form a sauce or by prepared picanti or other hot
salsa.
Serve in bowls. Rice topped by peas topped with salsa.

Lentil Casserole
Lentils are the over looked pea.
Try some they are really good.
1 Pound Lentils
1 Large Onion
3 Tablespoons Oil
1/4 Green Pepper Chopped
Wash lentils under cold water. Cook in covered large pot
over medium heat for about 40 minutes. While lentils are
cooking saute onions and peppers in oil (olive adds a nice
touch) Remove lid and let most of water evaporate from
lentils. When lentils have cooked almost dry add the
following ingredients.
1 8 Ounce Can Tomato Sauce
1 Cup Milk or 8 Ounces Sour Cream
Cooked peppers and onions
Stir to blend and pour into caserole dish. Top with grated
cheddar cheese. Bake in hot oven for 15 minutes or until
cheese is melted.
Good additions smoked sausage, ham, canadian bacon, or link
sausages.
Also makes a good soup. Simply add ingredients to lentils
without cooking down and serve as a soup.
Serve with corn muffins and salad for a complete meal.
